Executes Culinary Strategy to meet Business needs and maximize profit. Essential FunctionsSupervise Chefs and other kitchen personnel with responsibility for hiring, performance management, career guidance, training, and disciplineFosters and promotes a cooperative working climate, maximizing productivity and employee moraleParticipates in developing the vision of food and concepts trends consistent with company objectives and initiativesAssist in developing short- and long-range plans to meet business needs and maximize profitsAssist in ensuring that kitchens provide nutritious, safe, appealing and properly flavored foodAssist in establishing and implementing quality standards in cooking methods, presentation techniques, portion control and retention of nutrientsAssist in developing and managing the budgetEnsures a safety and sanitary work environment for all employeesIdentifies situations which compromise the departments standards and rectifies these immediatelyAssist restaurants and catering personnel in developing and generating annual salesAssist with developing special menus for functions and special guest profileInteract with restaurants guest to solicit feedback and ensure guest satisfactionDetermine food, labor, and overhead costs. Direct food apportionment policy to control cost and minimize laborCreates, develop recipe, plan, and prices menu items. Review sales and food cost daily and resolves any discrepancies with finance and accounting. Minimize waste and maintains controls to attain forecasted food and labor costs. Research local and imported products, New Suppliers, and special markets. Interact with product vendors to ensure that the hotel receives the best product. Provides Culinary instruction and demonstrates culinary techniques to kitchen staff. Manage daily orderings approval and manage food cost. Knowledge and SkillsEducation: College degree preferably specializing in hotel/restaurant management or culinary arts, or equivalent experience is required. Experience: Three (3) to five (5) years previous experience in multiple culinary/food & beverage department head positions specializing in pastry design and creation. Three (3) to five (5) years previous experience in multiple culinary/food & beverage management positions.
